Betta Gumbo announced that they were closing their location on Windsor’s iconic Main Street on Halloween of last year. Betta Gumbo in Windsor was the last Colorado location for the restaurant chain.
Since then, the restaurant has closed and the building has remained empty. I was on a walk to my favorite coffee shop in Windsor when I discovered that a brand-new restaurant would be coming to the old Betta Gumbo location in Northern Colorado.
