New Hampshire restaurant owner defends tipped wage system before Congress

MANCHESTER, N.H. — Some states and cities are considering whether to change the way tipped workers are paid, but one New Hampshire business owner went to Capitol Hill to advocate for keeping things the way they are.

Employers can pay their tipped workers a wage that’s below the standard minimum wage, and customer tips make up the rest of their pay, but there’s a push in some areas to do away with that method.

Tom Boucher, CEO of Great New Hampshire Restaurants, told lawmakers in Congress that the current system is better for businesses, servers and customers. He said servers at one of his restaurants, the Copper Door in Bedford, consistently earn $20-$30 per hour…
