Hinderks draws on eastern influences: City Juice with John Malik

After the Vietnam War ended, many thousands of South Vietnamese refugees came to the U.S. A fair number of them settled in south Louisiana, around my hometown of New Orleans. Vietnam has an enormous coastline, and a lot of the refugees were experienced at catching and cooking the seafood of the South China Sea.

Many years later, chef Conner Hinderks also ended up in New Orleans. I met him when his Little Secret pop-up was at a local brewery and at my first bite of his short rib braised in Vietnamese spices, I was a fan.

So how did he get to Greenville?…
