LUBBOCK, Texas (KCBD) – Two Lubbock restaurants landed at the bottom of this week’s Food for Thought. Two others, and one on wheels, are at the top.
Taqueria Y Dulceria Guadalajara at 1925 19th had 20 violations.
- Raw eggs above the safe cold temperature of 41 degrees.
- Cooked chicken did not have a date mark.
- Utensils were in two separate hand sinks. Hand sinks are for hand washing only to prevent cross contamination.
- There were no paper towels at the hand sink.
- There were no utensils available for ready to eat baked goods
- Raw chorizo was stored above raw bacon.
- There was a brown substance inside the soda nozzles.
- Cans were heavily dented. This can cause botulism.
- A granular ice melt chemical was stored above condiments.
- Medication was stored above canned foods.
- The certified food manager certificate is expired.
- The restaurant serves ceviche, but they do not have the approved variance for the service of undercooked fish.
- And there was no consumer advisory for the consumption of undercooked fish.

- Ice transport container not stored in an inverted position between use.
- Top of ice machine soiled with an accumulation of dust, dirt, and other debris.
- Handwashing signage not available at hand sinks.
The report shows most of the violations were corrected at the time of the inspection.
El Mitote Sports Lounge at 4525 Milwaukee had 27 violations.
- Multiple items were above the safe cold temperature of 41 degrees including, chicken, steak, hotdogs, and sausage.
- A container of hotdogs was directly on top of a container of uncovered ready-to-eat sausage.
- Raw meat was being cut on a prep table above bulk containers of sugar, rice and beans.
- Raw shrimp was stored over ready-to-eat cucumbers, tomatillos, cooked shrimp and ceviche.
- The dishwasher was not sanitizing.
- A tub of clean utensils and a citrus dicer were dirty.
- An employee handled trash and came back to the food service area without washing their hands.
- The dishwasher and three compartment sink are not plumbed correctly.
- Several items did not have a date mark including milk half-and-half and chili rellenos.
- Ceviche and elote were held past their date mark.
- Knives were chipped. A citrus squeezer was missing a piece.
- The drain board next to the dishwasher was no longer self-draining.
- The inspector notes due to the nature and the number of the violations food safety knowledge was not demonstrated.

- Fly strips were hanging from the ceiling above four food prep areas during active food service.
- Multiple wiping sanitizer towels were stored on prep tables.
- Boxes of frozen food were stored directly on the floor in the walk-in freezer.
- Containers of RTE/TCS hot dogs, and sausage were stored uncovered on prep table in grill area.
- Bowls of RTE/TCS salsa stored on trays stacked in the reach-in cooler are not covered to protect the product from the bottom of the above tray.
- Single-service plastic drink mix bottles are being used to store dry seasonings like pepper, salt, and other dry seasonings.
- Cardboard boxes are being used to line food service storage shelves in the prep area.
- Reach-in freezer with ice cream had an accumulation of frost.
- Personal cell phone, and personal drinks were stored on prep table above bulk storage.
