We may not be able to feel the seasons changing just yet in the Pensacola area, but restaurants across Escambia and Santa Rosa counties are already giving their menus a refresh to reflect the flavors of the fall and winter season.

New fall/winter menus
Angelena’s Ristorante Italiano

Angelenas’ new executive chef Ian Gillette is gearing up to debut a fall/winter menu that will pair perfectly with the seasons. In addition to some of the seasonal changes, Angelena’s is making other enhancements to their menu, including broadening their international scope of wine offerings and revamping some of their menu staples. Here’s a taste of Gillette’s new menu, paired with some special cocktails curated by Assistant General Manager Matt Nichols, set to debut on Nov. 5.
- Whipped ricotta and hot honey: Crushed pistachio, crushed red pepper, orange zest and grilled focaccia.
- Crispy artichokes: Long stem artichokes, charred garlic aioli, grilled lemon and parmesan.
- Beet and arugula salad: Roasted and pickled beets, pesto, toasted pepitas and burrata.
- Stuffed farfalle: Butternut squash, sweet potato, sage brown butter and candied walnut.
- Seared scallop: Garlic cream, pasta orzo, local squash, Lacinato kale and lemon.
Cocktails:
- Sardinian 75: Fords Gin, Sardinian Mirto Myrtle berry liqueur, lemon, pomegranate, mint and prosecco.
- Smoked Pancetta Old Fashioned: Smoked pancetta infused Buffalo Trace Bourbon, Aztec chocolate bitters, Angostura bitters, Demerara, candied pancetta cube garnish.
