EMMAUS, Pa. – Taking inspiration from her late husband, a Lehigh Valley woman is realizing her decades-long dream of operating her own restaurant with a new cafe in Lehigh County.
Rebekah Doyle, an Emmaus mother of three boys, plans to open Cafe 23 – an eatery “catering to the health-conscious foodie” – in late October at 318 Main St. in Emmaus.
The cafe is the next step in Cafe 23’s evolution, with Doyle having introduced the concept as a pop-up eatery – operating from April through August at Jay’s Local in Allentown – and launching a mobile aspect of the business – The Brunch Box food trailer – in late summer.
