When life gives you lemons … make mini pancakes. And cakes, waffle sticks, brownies, sundaes, signature and custom milkshakes, cheesecake, banana pudding, and much more. That’s what Sandy Jalal did four years ago when the architectural design major lost her job as a 5G phone tower designer during the COVID-19 pandemic.
“Around 3 ½ years ago, I started playing around the idea of selling the cakes and pancakes I made at home,” Jalal said. “I was running out of savings, so I bought a tent, two 6-foot tables, a pancake machine and named the business Yo Momma Stacks. The owners of the Shell station at the corner of Nash Street and Airport Boulevard are family friends, and they allowed me to work from under that tent in their parking lot until I could afford a trailer, which took about nine months.”…
