LANCASTER, Pa. — GEM’s Catering in Lancaster started out in the kitchen of Emily Gonzalez’s home. She wanted to spend more time with her young children and began making dishes, mainly empanadillas, for friends and school events.
It grew as she began getting more requests and she soon decided to lease a space on North Queen Street and open her catering business.
